Aloo Paratha is a popular Indian flatbread stuffed with spiced mashed potatoes. Here’s a simple recipe for making Aloo Paratha at home:
For the Dough:
2 cups whole wheat flour (atta)
Water, as needed
Salt, to taste
For the Potato Filling:
3-4 medium-sized potatoes, boiled and mashed
Small onion, finely chopped 1
1-2 green chilies, finely chopped
1 teaspoon ginger, grated
Cumin seeds. 1/2 Teaspoon
1/2 teaspoon garam masala
Red chili powder (adjust to taste)
Fresh coriander leaves, chopped
Salt, to taste
Ghee or oil, for cooking. as required
Prepare the Dough:
- In a mixing bowl, combine whole wheat flour, salt, and water.
- Knead the mixture into a soft, pliable dough.
- Cover the dough and let it rest for at least 15-20 minutes.
Prepare the Potato Filling:
- In a bowl, mix together boiled and mashed potatoes, chopped onions, green chilies, grated ginger, cumin seeds, garam masala, red chili powder, chopped coriander leaves, and salt.
- Ensure that the mixture is well combined.
Assemble the Parathas:
- Divide the dough into equal-sized portions and roll each portion into a ball.
- Take one dough ball, flatten it, and roll it into a small disc using a rolling pin.
- Place a portion of the potato filling in the center of the disc.
- Bring the edges of the disc together to cover the filling and seal it, forming a stuffed ball.
- Flatten the stuffed ball and dust it with flour.
Roll and Cook the Parathas:
- Roll the stuffed ball into a flat disc, ensuring the filling is evenly distributed.
- Heat a tawa or griddle over medium heat.
- Place the rolled paratha on the hot tawa and cook until small bubbles appear on the surface.
- Flip the paratha and apply ghee or oil on the cooked side.
- Cook the other side until golden brown spots appear.
Serve:
- Repeat the process for the remaining dough and filling.
- Serve the hot Aloo Parathas with yogurt, pickle, or any desired accompaniment.
